Today’s lunch - Sweet potato Tortilla was cooked last night whilst I was cooking the girls tea.  You will need one large peeled and finely sliced sweet potato which I steamed until tender, 7 eggs, a sprig of rosemary and I added the left over roasted veg from yesterday, grated cheese optional.  After steaming the sweet potato, melt a blob of butter in a heavy based frying pan and add the sweet potato, add the roasted veg, rosemary and 7 eggs that have been mixed up in a jug.  Let it cook on a medium heat until it starts to come away from the edge of the pan and then add some grated cheese on top if you’d like it and put under the grill or in the oven for the rest to cook, roughly about 5 mins.  Take it out and let it cool, this morning my husband went off with half of this plus some lettuce, tomatoes, grated carrot and salad dressing (3 tablespoons of olive oil, 1 cider vinegar and 1 tsp of dijon mustard).  Hope you’ll try this and enjoy it, great alternative to pizza and a filling lunch!
