This fed four of us with a green salad with plenty left over for lunch the next day. You will need one butternut squash, two beetroots and one courgette cut into cubes and roasted in some coconut oil and a clove of crushed garlic. A small chicken breast for each person baked in the oven with the juice of two oranges and a garlic clove plus a spoonful of honey, when cooked cut into bite sized chunks. You could alternatively use cold chicken. A packet of red, white and black quinoa mixed seed, rinse it and then bring it to the boil then simmer until it starts to split, drain and rinse again with boiling water and leave to cool, fork through it several times to help it cool down. Mix all the ingredients together with a large handful of mint and dressing made up of six tablespoons of olive oil, two tablespoons of cider vinegar, one teapoon of dijon mustard, one teaspoon of honey and the juice of an whole orange.
