Here’s a gluten and sugar free pancake alternative!  

Made 2 pancakes - 1/2 banana, 1 egg, 1/2 tsp of cinnamon, 1 dessert spoon of ground almonds, whizz all the ingredients up with a blender and then add a little blob of butter/coconut oil to a hot pan and ladle the mixture into the pan and cook until turning brown then flip and cook the other side add toppings of your choice…..........................
